campaign-style oatcakes
Makes about 10 pancakes / serves 3-5 volunteers
Ingredients:
2 cups of whole rolled oats (not quick-cooking)
1/2 cup flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
2 ounces (1/2 stick) butter, melted and cooled a little
2 cups of buttermilk
1 teaspoon vanilla extract
Directions:
Combine the dry ingredients in a medium bowl.
In a separate medium bowl, beat together the eggs and melted butter until emulsified.
Add in dry ingredients and mix them well until free of lumps.
Let the batter sit for at least 45 minutes. Longer (even overnight) is okay.
Heat a skillet to medium and coat with butter.
Pour 1/4 to 1/3 cup batter onto the griddle for each pancake.
Flip when bubbles start to form on the surface and the edges are getting dry. Adjust heat as needed so they don’t brown too quickly.
